Bacon

What is it about bacon that lets it work so well as a garnish? Is it the salty flavor that humans crave so much (second only to sugar in the number of receptors that are attuned to it in the mouth). Is it the the texture? Very few meats can be either soft and yielding or crunchy without changing flavor.

All I know is that I've been craving bacon this morning........
